I never cared much for meatloaf, but this recipe will make you want to tell your mother how to actually make one that is irresistible. It’s moist and flavorful and basically guilt free since you’re making it with turkey! No sauce needed for this one.
2 lbs. ground turkey
1 can Rotel
3 tbsp milk
1 cup breadcrumbs (sourdough preferred)
1/4 cup ketchup
1 tbsp olive oil
1/4 to 1/2 of a red onion finely diced
2 cloves garlic minced
Salt (or favorite seasoning salt)
Prep: Preheat oven to 375. Mix all ingredients into mixing bowl and knead together well. Put mixture into one large and one small bread baking dish. Bake for 1 hour or until center of meatloaf is 170 degrees. Let cool for 5-10 minutes before serving.
