This dish has so much flavor and can be served to impress or make for the family. It’s quick and easy but people will think you spent forever on it. Hope you like it.
Angel Hair pasta
2 lbs Shrimp (16-20 size)
2 tbsp Olive oil
8 slices Bacon (diced)
1 cup White onion
8 to 16 oz. Artichoke hearts (optional)
2 tbsp Minced garlic
3/4 cup White wine
2 tbsp Fresh parsley
Salt & Pepper
1 tsp Crushed red pepper flakes
4 Roma tomatoes
2 tbsp Fresh basil
Parmesan cheese to top
Cook bacon in pan until almost done, move to side of pan and add olive oil and garlic.
Add onion and mix with everything in the pan. If you want artichoke hearts, add them after onion is translucent.
Add ½ cup white wine (save the ¼ for later), salt, pepper, red pepper flakes, and basil. Bring back up to medium/high heat then add the shrimp.
Cook until shrimp are done then add tomatoes, remaining wine and parsley. Heat just enough so that the wine and tomatoes can come up to temperature.
Serve over pasta and garnish with parmesan.
Tip: You can also make this a cream sauce if you wish by adding a cup of heavy cream.
